Es ist oft viel Zeitdruck da, und dann geht einiges verloren», sagt die junge Chefin eines Restaurants auf die (BGN-) Frage, wo sie der Schuh drückt. Und der Besitzer eines Hotels antwortet: «Unser Controlling könnte besser sein. Ich glaube, wir könnten unsere Reserven besser nutzen. Das müssen wir, denn der Marktdruck auf unsere Branchen nimmt zu». Wie können sich die Betriebe darauf vorbereiten?
